Oatmeal Quinoa Bars

Ingredients

  • rolled oats, 2 cups
  • white quinoa, 1 cup rinsed, drained, & dried
  • applesauce, ½ cup
  • maple syrup or agave, ½ cup
  • vanilla extract, ½ tsp
  • cranberries, raisins, or dates, ½ cup chopped
  • chia seeds, ¼ cup
  • cinnamon, ½ tbsp or some more
  • salt, generous pinch
  • optional: add 2 tbsp - ¼ cup of your favorite nut butter

Directions

  1. Preheat oven to 350°.

  2. Heat a non-stick pan on med-low heat and add quinoa.

  3. Toast quinoa (stir frequently) for 5-7 minutes until you smell a nutty aroma and quinoa begins to lightly brown.

  4. Remove from heat and let quinoa cool completely.

  5. Combine wet ingredients in a small bowl: applesauce, maple syrup or agave, vanilla

  6. Combine dry ingredients in a medium size bowl: oats, cooled toasted quinoa, chia seeds, salt, and cinnamon

  7. Add wet ingredients into dry and mix together well. You may want to use your hand to really massage the ingredients together. If you’re adding a nut butter, these bars will come together easier.

  8. Cover a medium or large baking sheet with parchment paper. Pour the oat bar mix onto the sheet and use your hands to flatten into one giant rectangle or square bar.

  9. Enter into oven and bake for 20-25 minutes.

  10. Once baked, remove from oven and sheet pan, let cool completely, preferably on a cooling rack.

  11. Cut up into square or rectangle bars and enjoy!
