Why Ancient grains? They are nutrient-packed and offer high protein and high fiber content. Spelt flour, in particular, is linked to a reduced risk of diabetes, heart disease, and obesity!

Ingredients
Dry
- spelt flour, 1 cup (plus some more reserved for batter adjustments)
- baking powder, 1 tsp
- coconut sugar, 1 tbsp
- salt, 1/4 tsp
- optional: generous sprinkle of cinnamon
Wet
- plant-based milk, 1 cup
- apple cider vinegar, 1 tbsp (stir & let sit)
- vanilla extract, 1 tsp
- banana, 1 overripe & mashed
- flax egg, 1 (3 tbsp water + 1 tbsp ground flax)
Directions
- Combine dry ingredients in a large bowl and whisk.
Combine wet ingredients in a separate bowl (the bowl with mashed banana) and whisk.
Add wet ingredients to the dry bowl and whisk together until you form a pancake batter.
Adjust the consistency by either adding more plant-based milk, water, or spelt flour. Spelt flour can be thick, so starting off with a cup is safe, then adjust as needed.- Heat a pancake griddle, skillet, or large pan with coconut oil (or other oils like avocado or extra virgin olive oil).
- Using a ladle, scoop out about 1/2 cup of batter and carefully place it onto the griddle/skillet/pan on low-medium heat to form a pancake. When the pancake batter begins to bubble, flip it and continue to cook for 3-4 minutes. Check the pancake to see if it’s golden brown and cooked through.
- Oil the pan with each batch to prevent burning.
Serve warm and enjoy with your favorite pancake toppings! Definitely add some fresh fruit.
