You can make this recipe entirely fresh, OR if you baked a whole batch of sweet potatoes and need creativity for leftovers.. this is the recipe for you. 

Maple Sweet Potato Pancakes

Ingredients

  • sweet potato, 1 large
  • oat flour, 1 ½ cups (blended up oats)
  • plant based milk of choice, 1 ½ cups plus some more on hand
  • maple syrup, 1 tbsp
  • vanilla extract, 1 tsp
  • ground cinnamon
  • salt

Directions

  1. If making recipe fresh, dice up your sweet potato and boil in a medium pot for 15 minutes or soft enough, you can poke a fork thru.

    (If you have a pre-made potato, just remove the skin and continue on to line 3)

  2. Drain potatoes and rinse with cold water. You want these completely cooled.

  3. If making oat flour from whole oats, add in a generous pinch of salt and cinnamon prior to blending, for added flavor.

  4. Make your batter. Add cooked potatoes to a medium sized mixing bowl and mash up with a hand masher or fork.
    Add remaining ingredients, liquids first, then the dry, and whisk together.
    Add a dash of milk as needed to liquify batter.

  5. Heat a pancake griddle or pan and lightly coat with coconut oil (or your fave oil to grease with). Once warmed, add a scoop of pancake batter, cook on medium heat for 3-5 minutes, then flip and continue to cook until pancakes are golden.

  6. Top with cinnamon to serve and have your fave syrup handy.
