Ingredients
- white or brown long grain rice, 1 cup rinsed
- black beans, 1 can drained & rinsed
- frozen corn, ¾ cup
- salsa, ½ cup
- seasonings: smoked paprika, cumin, oregano, cilantro, sallt, pepper
- broth (beef or veggie), 2 cups
- breadcrumbs
- nutritional yeast
- olive oil
- optional garnish: guac— mashed avocado, lime juice, salt, pepper
- optional garnish: fresh cilantro
- optional garnish: greek yogurt or sourcream
Directions
Prep oven: Preheat oven to 375°f and lightly oil an 8x8 baking dish (circular or square).
- Heat broth: While prepping the dish, warm broth on the stove until hot.
Assemble base: In the dish, combine rice, black beans, salsa, and corn, along with 1 tsp each of seasonings, plus a generous sprinkle of salt and pepper. Mix well.
- Add broth: Pour hot broth over the mixture. It should just cover the ingredients.
Add topping: Generously cover surface with breadcrumb and nutritional yeast. You can mix breadcrumb and nooch beforehand, along with additional a sprinkle of salt, pepper, more dried cilantro and drizzle of olive oil, so it crisps on top.
Bake casserole: Place in oven and bake covered for 40 with foil, then remove foil and bake for an additional 15-20 minutes until you’ve reached a golden top.
Serve: Remove from oven and let sit 5 minutes before serving. Enjoy as a standalone meal and add your preferred garnish(es).
