Homemade 'Meatball' Hero

Ingredients

    Chickpea 'Meatballs'

    • chickpeas, 1 can, drained & rinsed
    • garlic, 2 cloves roughly chopped
    • white or yellow onion, 1/4 chopped
    • handful of chopped fresh herbs, parsley, basil, oregano
    • coconut aminos, 1 tbsp
    • tomato paste, 1 tbsp
    • smoked paprika, 1 tsp
    • garlic powder, optional
    • onion powder, optional
    • nutritional yeast, 2 tbsp
    • dried Italian herbs, optional

    Simple Tomato Sauce

    • tomatoes, 2-3 medium, cut into pieces (or 1 cup cherry tomatoes, chopped)
    • garlic, 1-2 cloves, roughly chopped
    • dried Italian seasoning, basil, thyme, rosemary, oregano

    Extras

    • hero bread, or bread of your choice 1-2 slices
    • red chili pepper, for spice kick
    • evoo, for cooking
    • salt & pepper, to taste

    Directions

    1. Preheat Preheat oven to 375°F. Line a baking sheet with parchment paper.

    2. Blend In a food processor, blend chickpeas, garlic, onion, herbs, coconut aminos, tomato paste, paprika, nutritional yeast, and dried herbs until combined but slightly textured. Taste test and adjust flavor to your liking.

    3. Shape Roll into 1-inch balls. If too soft, refrigerate 10–15 minutes. Place on a baking sheet and enter into oven for 20 minutes, flip halfway.

    4. Make Sauce Heat evoo in a pan over medium heat and sauté garlic for 1 minute.

    5. Add tomatoes, Italian seasoning (1 tsp each or more), salt, pepper, and pinch of red chili pepper if using. Cook 8–10 minutes. Mash or blend tomatoes as they soften into a sauce until you reach desired texture.

    6. Serve Spoon sauce over your choice of toasted bread, lay out ‘meatballs’ and smash down with a fork (unless stuffing a hero) then spoon sauce on top. Add grated cheese or garnish with fresh herbs.
