Asian-Italian Garlic Bok Choy Spaghetti

Ingredients

  • plant-based spaghetti, 8oz (225g)
  • vegetable broth (or reserved pasta water), ½ cup for cooking
  • evoo, 1-2 tbsp + some more on hand
  • garlic, 4-5 cloves, roughly chopped
  • baby bok choy, 3-4 bunches halved or quartered lengthwise
  • red pepper flakes, 1 tsp
  • lemon, 1 cut in half
  • nutritional yeast, 2 tbsp
  • fresh parsley, 1/4 cup chopped, for garnish
  • sesame seeds (optional), for garnish
  • salt & pepper, to taste

Directions

  1. Cook the Spaghetti. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instruction, reserve 1/2 cup of the pasta cooking water, then drain and set aside (or you can use broth in place of pasta water for deglazing later on).

  2. While spaghetti cooks… heat olive oil in a large skillet over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant. Then add baby bok choy and stir-fry for 3-4 minutes until softened and lightly browned. Toss in the red pepper flakes for a touch of heat and juice half the lemon. Combine well.

  3. Deglaze skillet with ½ cup reserved pasta water or broth. Cook for 2-3 minutes until the liquid reduces slightly, then toss in the cooked spaghetti. Combine well.

  4. Toss in nutritional yeast, along with a generous pinch of salt and pepper. Taste test this meal and adjust. You may want to add more olive oil for serving. You can add more seasonings of your liking.

  5. Plate your paste dish and garnish with fresh parsley and sesame seeds. Add an additional squeeze of fresh lemon juice, if desired.
