Creamy Caesar Comfort Pasta
3-4. 1 to 1/2 cups to serve
Ingredients
Pasta + Sauce
- pasta of choice, 1 8oz box
- raw cashews, ½ cup soaked in water or broth for 20 min.
- coconut milk or cream, 2 tbsp
- tahini, ½ cup
- garlic, 3 cloves roughly chopped
- lemon, 1, juiced
- reserved pasta water (to liquify sauce), 1 cup set aside
Plant Parm, for serving
- hemp seeds, 4 cup
- nutritional yeast, ¼ cup
- garlic powder, 1 tsp
- onion powder, 1 tsp
- salt, generous pinch/to taste
- salt & pepper, to taste
Top It Off:
- drizzle of extra virgin olive oil
- fresh parsley
- toasted pine nuts, ½ cup
- red chili flakes
Directions
Cook pasta according to package instructions in broth or water. Reserve 1 cup of liquid and set aside to save for the sauce.
- In a blender, add all creamy caesar ingredients (excluding water) and blend — it will be a thick consistency.
Slowly reserve pasta water, ¼ cup at a time and then blend. Continue to add more liquid until you reach your desired sauce consistency. Taste test and adjust, if desired.
Combine pasta and creamy caesar sauce.
To make plant parm, add all ingredients to a small bowl and combine with a fork. You can also blend until well combined and powdery, scraping down the sides as needed. Taste and adjust salt if desired.
Top pasta with plant parm to serve. Save the rest in an airtight jar for future meals.
Add any additional toppings or sides as desired.
