This recipe will guide you into the universe of Ayurvedic cooking, where you will learn to develop flavor throughout the cooking process! You will work with spices commonly used in Ayurvedic cooking that are meant to aid digestion. Ayurvedic cooking derives from the ancient medicine of Ayurveda, which is meant to emphasize balance and harmony in the body, mind, and spirit.

Black Bean & Potato Curry

Ingredients

  • evoo, or other oil for cooking
  • onion or shallot of choice, quarter diced
  • garlic, 3 cloves minced
  • spices: curry, cumin, turmeric, ginger powder, salt, pepper
  • large carrot sticks, any color or a mix, 2 diced
  • potatoes, white, red, or purple, 2 medium diced
  • diced tomato, 1 can or dice a whole tomato
  • coconut milk, 1 cup
  • black beans, 1 can drained & rinsed
  • broccoli florets, 1 ½ cups

Recommended Garnish, Cashew Cream

  • raw unsalted cashews, ½ cup soaked in water for at least 20 minutes
  • nutritional yeast, 1 tbsp
  • lemon, ½ juiced
  • salt & pepper, to taste
  • water or broth, to liquify

Directions

  1. Heat a deep medium size skillet or large non-stick pan over medium heat.

  2. Once warmed, coat pan with cooking oil, and add in onion and garlic, along with a generous sprinkle of each spice. Mix together and saute until aroma builds, onions are cooked and garlic is fragrant. About 5-7 minutes.

  3. Then add in diced carrot, continue to saute for 7-8 minutes.

  4. Add in diced potato, continue to saute for 5 minutes.

  5. Add diced tomato and coconut milk, begin to carefully combine all veg and liquid together in the pot. Then add another generous sprinkle of each spice. Let this come to a boil.

  6. Once boiling, reduce heat and cover. Let simmer for 10 minutes.

  7. Then add in black beans and broccoli florets, combine well and then add some more spice, another generous sprinkle.

  8. Taste test and adjust. Let this curry continue to simmer for another 10 minutes, until black beans are heated through and broccoli is tender.

  9. If serving with cashew cream, to make the cream, drain soaked cashews, add all ingredients to a blender or magic bullet, add water (or broth) 1 tbsp at a time as needed to reach desired consistency. Taste test and adjust! Serve a hefty dollop on this warm, yummy curry and enjoy!
