Create Your Own Tofu & Bean High-Protein Roast

A staple formula for leftovers, meal prep, lazy days, or just when you need a nourishing meal. Serve with a base like rice, pasta, or greens. 

Create Your Own Tofu & Bean High-Protein Roast

Ingredients

  • tofu, 1 large block or at least half block
  • beans, 1 can of choice, drained & rinsed (great northern/white beans, kidney beans, black beans..)
  • 1-2 fiber rich whole veggies of choice (asparagus, broccoli, zucchini, carrot, beets, celerey etc..)
  • 1 acidic whole veg like tomato or pepper, any color
  • an aromatic element like onion (red, yellow, white)
  • optional: starchy whole veg(gies) of choice (potato/sweet, squash, corn)

Coating

  • any herbs/seasonings dry or fresh (garlic, o
  • salt & pepper
  • optional preferred condiment: coconut aminos, soy sauce, vinegar, bbq sauce, buffalo sauce, a dressing…

Directions

  1. Preheat oven to 400°.

  2. Prep tofu, if possible, Consistency will roast so much better when moisture is removed. Drain tofu of all liquid. Cut tofu in-half to make to thin pieces. Wrap in a heavy duty kitchen towel, place on a cutting board or preferred service (that can get wet without making a mess). Place something heavy on top like cookbooks and let sit for at least 10 minutes.

  3. Prep your ingredients by chopping all veggies.

  4. Line a baking sheet or use a deep baking dish to toss in veggies and beans.

  5. Once tofu is ready, cut tofu into cubes or to desired cut. You can crumble as well.

  6. Add your coating. Use a heavy hand for best flavor!

  7. Mix around combining all ingredients evenly.

  8. Enter into oven and bake for 20 minutes, or until the roast is at your desired crispiness. You can broil for 2-3 minutes on high as well.

  9. Serve over a base. Top off with nutritional yeast and ground red chili pepper, and any other desired seasonings.

  10. Divide bulk batch evenly for meal prep.
