Breaded Tofu

Ingredients
- extra firm tofu, half block ot full to bulk prepping
The Marinade
- coconut aminos or soy sauce, 3/4 cup
- honey, 1 tbsp
- lime, 1 whole juiced
The Coating
- almond, oat flour, or breadcrumb, 1 to 1 1/2 cups(you can blend rolled oats into flour if you have oats on hand)
- a mix of seasonings: salt, pepper, oregano, red chili pepper, umami, cayenne...
Optional, Delicious Peanut Sauce
- peanut butter, 2 tbsp
- rice vinegar, 2 tbsp
- coconut aminos or soy sauce, 2 tbsp
- 2 tbsp water
- lime, ½ juiced
- sesame oil, 1 tsp
Directions
Preheat oven to 375°.
Prep tofu. Completely drain tofu & slice horizontally, wrap in a kitchen towel, place on a cutting board & top it with something heavy like cook books to drain out the tofu even more. Let that sit 15-20 min.
For the marinade, mix together sauce, honey, & lime—adjust flavors to your liking.
Return to tofu, slice blocks into cubes and toss with the marinade. Let the tofu sit for a bit while you move onto prepare the coating.
Make the coating. Combine seasonings into your flour about 1/2 tsp to 1 tsp each, continue to taste test and adjust.
Spread the breaded tofu on a baking sheet and enter into oven—cook for 20 minutes until tofu is crispy and golden.
If enjoying the peanut sauce, to prep, you can add to a small mixing bowl and whisk vigorously until well-combined. Add water or broth as needed to make creamy smooth.
