Charred Sweet Potatoes Naked Farmer Dupe

Ingredients
- sweet potatoes, 2 large, cut into 2-inch long pieces (1 inch thick)
- evoo, for coating
- smoked paprika, 1 tsp
- thyme, 2 tsp
- nutritional yeast, 1 tbsp
- salt & pepper, to taste
- ground cinnamon, a pinch on hand
- honey, 1 tbsp
- lemon, ½ freshly squeezed
- fresh rosemary, a handful of sprigs washed
- fresh herbs like parlsey or cilantro, for garnish if desired
Directions
Preheat the oven to 400°F.
Place chopped sweet potatoes into a medium size bowl. Add a generous drizzle of olive oil, then add paprika, thyme, nutritional yeast, salt and pepper.
Add drizzle of honey, plus the lemon juice and toss around to coat all potatoes evenly.
Prep a parchment covered baking sheet and lay out rosemary sprigs. Place coated potatoes on top of the sprigs. (This trick allows the vegetables to really soak up the herb flavor)
Enter into oven and bake for 15 minutes, flip potatoes, sprinkle with cinnamon, return to oven bake for additional 10-15 minutes until potatoes are charred and softed when poked through.
Garnish with fresh herbs and enjoy warm.
