This bowl is simple and rich in essential omegas to support brain, skin, and hormone health, and makes 2 servings for meal prep or to share.

Smoked Salmon Omega Bowl

Ingredients

  • smoked salmon, 1 package
    Recommended: Trader Joe’s Wild Sockeye Smoked Salmon
  • optional: broth for cooking
    Recommended: Trader Joe’s Miso Broth
  • dry basmati rice, or rice of choice, ½ cup
    OR, Trader Joe’s Frozen Organic Brown Rice or Basmati, 1 pouch
  • arugula, 1 ½ cups
  • carrot, 1 medium to large fresh root
  • avocado, 1 small or half of 1 large
  • pumpkin seeds, for garnish

Dressing

  • coconut aminos, ¼ cup
  • rice vinegar, 2 tbsp
  • sesame oil, 1 tsp
  • ground ginger, 1/4 tsp
  • lime juice, 1 tsp

Directions

  1. Cook rice according to package instructions, using broth instead of water for extra flavor if desited.

Prepare Bowl Fillers:

  1. Shred carrot with a grater or potato peeler.

  2. Slice avocado.

  3. Divide smoked salmon into 2 servings and slice.

  4. Wash and dry arugula if needed; massage with lemon or lime juice if desired.

Make Dressing:

  1. Whisk ingredients in a small bowl. Taste and adjust, adding more lime or vinegar for extra tang, or adding water to soften

Assemble 2 Bowls:

  1. Add rice, then arugula, salmon, avocado, and pumpkin seeds (1–2 tbsp per bowl).

  2. Keep dressing on the side until serving especially if meal prepping, to reduce sogginess.
