Ingredients
Cooking Essentials
- extra virgin olive oil
- lemon juice
- salt & pepper
The Meat
- organic, grass-fed angus beef top round steak, 8-12oz
- fresh garlic, 2 cloves minced
- sprigs of fresh oregano, 4-5
The Grain
- basmati rice, 1 cup dry
- lactose-free butter, ghee, or any butter, 1 tbsp
The Greens
- choice of greens: arugula, romaine, dandelion, etc…
- tomatoes
- cucumber
- red wine vinegar
- maple syrup
- dry thyme
The Dip
- greek yogurt, 2 tbsp
- fresh dill, preferred or dry
- fresh parsley, preferred or dry
Directions
- Soak rice in water for 10–15 minutes.
While rice soaks, marinate steak. Mix garlic, 1–2 tbsp olive oil, 1 tbsp lemon juice, salt, and pepper, then coat each side of the sneak and set oregano sprigs underneath the steak.
Cook rice according to package instructions. This should take 30 minutes, maybe less.
- When rice is done, add salt, pepper, and butter. Let butter melt and mix into rice.
While the rice cooks, prepare enough salad for 2 servings. Chop greens, tomatoes, and cucumber.
- Make dressing with 2 tbsp olive oil, 1 tbsp red wine vinegar, dash of lemon juice, dash of maple syrup, 1 tsp dried thyme, salt, and pepper.
- Toss dressing into salad and set aside.
Prep the dip by mixing yogurt with chopped dill and parsley, dash of olive oil, lemon juice, salt and pepper.
When rice has 10 minutes left, cook steak with oregano underneath, either grilled or pan-seared, 4-5 minutes per side.
- Let steak rest briefly, then slice.
Assemble bowl with rice, salad, steak, and a dollop of yogurt dip. Optional to garnish with additional fresh herbs, pepper, and red chili flakes.
