Simple Baked Breaded Cod & Sautéed Radish

Ingredients

    The Fish

    • cod filets, 2
    • italian breadcrumb, or season breadcrumb w/ italian herbs
    • evoo

    The Radish

    • radish, 4-5 bulbs washed thoroughly & thinly sliced
    • choice of butter: original, lactose-free, or ghee
    • salt & pepper, to taste

    Optional: Salmoriglio Sauce

    • base: olive oil, lemon juice, 1 fresh garlic clove
    • herbs: 1 tbsp oregano tbsp & 1-2 tbsp parsley finely chopped, optional 1 tsp mint finely chopped
    • seasoning: salt, pepper, optional ground red chili pepper

    Directions

      Breaded Cod

      1. Preheat oven to 400°F.

      2. Pat cod fillets dry, season lightly with salt + pepper.

      3. Coat evenly with olive oil, then coat with seasoned breadcrumbs.

      4. Place on a parchment-lined baking sheet, drizzle with olive oil.

      5. Bake 12–15 minutes, until golden and fish flakes easily. Broil for 1-2 minutes for extra crisp on the outside.

      Sautéed Butter Radish

      1. Slice or halve radishes.
      2. Heat a knob of butter in a skillet over medium heat.
      3. Sauté radishes 5–7 minutes, until lightly golden and just tender.
      4. Season with salt, pepper, and a squeeze of lemon.

      Optional Salmoriglio Sauce

      1. Whisk together: juice of ½ lemon, ¼ cup olive oil, 1-2 minced garlic cloves, chopped oregano & parsley, salt + black pepper. Let sit for 10-15 minutes to absorb flavor.

      2. Drizzle over baked cod just before serving.
