Spinach Chickpea Patty

Ingredients
- your choice of bun
- chickpeas, 1 can drained & rinsed
- fresh spinach leaves, 1 large handful
- almond flour, ½ cup (blend almonds into flour, or use any gf flour)
- 1 tsp each basil, parsley, thyme
- nutritional yeast, 2 tbsp
- salt & pepper, to taste
- optional: sprinkle of red chili flakes for some spice
- lemon, half juiced
- evoo, 1 tbsp
- plus, any other burger toppings of your choice
Directions
Preheat oven to 375°.
Add all ingredients to a food processor and blend. If you do not have a food processor (or a blender), you can mash up by hand though it will be labor intensive.
With slightly damp hands, scoop out a palm size of the patty mix and begin to sculpt into a ball, then into a perfect patty shape.
Place patties on a parchment covered baking sheet, lightly coated with oil. Once you line patties up, you can also coat the top of the patties with some oil. I like to use an avocado oil spray.
Enter into oven and bake for 10 minutes. Then flip patties and bake for an additional 10 minutes.
Build your burger with favorite toppings and enjoy!
