NY Style Vegan Crumb Cake

Can't believe it's vegan, but it is! Guilt-free dessert your insides will approve and LOVE. This can be made in 30 minutes!

Ingredients
The Cake
- bananas, 2 overripe
- plant based milk, 2 cups
- rolled oats, 2 ¼ cups
- maple syrup, 1-2 tbsp
- ground cinnamon, ½ tbsp
- vanilla extract, 1 tsp
- baking powder, 1 tsp
- salt, generous pinch
The Crumb
- all-purpose or whole wheat flour, ½ cup
- coconut sugar, ¼ cup
- coconut oil, 2 tbsp (solid state)
- salt, generous pinch
- ground cinnamon, generous pinch
Directions
Preheat oven to 350°.
Add overripe bananas and plant based milk to a medium size bowl. Mash bananas and mix together with milk.
Then add in remaining ingredients (oats, baking powder, maple syrup salt, cinnamon, vanilla). Mix together well.
Add “cake” batter into a large ramekin dish or any 8” in diameter baking dish.
Prep the crumb topping. Combine flour, sugar, coconut oil, salt and cinnamon into a small bowl and mix together with a spoon until ingredients combine and become crumb like.
Sprinkle crumb topping evenly over the cake creating a thick layer.
Enter into oven and let bake for 25 minutes.
Remove from oven and let cool for at least 20 minutes before serving.
